Pasta Bolognese

  1. 1LB. ground veal,beef,lamb
    Brown on high heat and drain..reserve 10%fat
    remove meat from pan
    Add 1/2 cup diced carrot
    add 1/2 cup diced yellow onion
    Brown these vegs on high heat and get some color
    deglaze pan with 1 1/2 cup red wine...boil til wine is gone then
    Re-add meat and 1 qt. peelied tomatoes and 2 bay leaf and fresh oregano and parsley
    also add a ton of garlic...
    add 2 cups water and boil for 4 minutes...reduce to slow boil for 45 minutes
    simmer for 1 more hr
