Dos Perros Durham,Nc

Went there a couple of weeks back for the first Time. Really impressed with the menu and the service was perfect. I always sit at the bar when I dine....no matter if its high end or burriotos. See Nathaniel at the Dos Perros bar and have him suggest a nice high gravity beer to go with your Carne Asada or Roasted Mole Pablano......amazing!!!!! They serve free chips and salsa....this was a highlight of the visit....excellent salsa!!!!

BTW.....they are downtown Durham tucked one block off Main st.

country style chicken creole cacciatore fricasee and rice!

ha. I made up the name, duh.
season (italian, salt, pepper) and brown 6 - 8 peices of chicken, I like bone in thighs.
set chicken aside, drain off fat.
add about 1/4 cup olive oil back to the pan, plus about 1/2 cup flour. Stir and scrape up the brown bits, slowly brown flour for about 15 mins., to a light tan/brown color.
Add (chopped) 1 onion, 1 bell pepper, 2 stalks celery, 4-5 cloves garlic. Saute' in the roux for 8~10 mins.
Add: 1 can chopped tomatoes, 1 can chicken broth, 1 can cream of mushroom soup, 1 cup white wine, ~2 cups water, fresh thyme, oregano, bay leaf. (optional: chopped bacon!)
Bring to a simmer, check liquid level/thickness, add chicken peices back, simmer covered for ~45mins. - 1 hour.
Serve over rice, I like yellow.

butternut squash soup

take a butternut squash, cut in half lengthwise, scoop out the seeds etc.
Slick each side w/ vegetable oil. season each side, I use a little curry powder, salt and pepper.
roast face down on baking sheet for ~45 mintues @ ~375F.
While that is happening, saute' and season some onion, jalapeno, celery, carrot, garlic.
Scoop out the roasted squash into a soup pot.
Add the saute'd veggies, plus 1 can of lite coconut milk, plus 2-4 cups of chicken or veggie broth.
Add some fresh thyme and parsely, then take a boat motor (stick) blender to it, or use a regular blender.
Siimer for ~20-30 minutes.
Add more broth and seasoning if it needs it, also some half and half for a creamier soup.

chili! This is my chili - part pre-prepared store bought, part fix-and-prepare.
1 pack mick fowler's chili mix
1 can beef broth
1 can rotel tomatoes/chilis
1 8 oz. can tomato sauce
1 can pinto or black beans
1 onion
1-2 jalapenos
3-4 cloves garlic
1 lb chuck steak or roast (or 2 lbs and leave out the ground chuck)
1 lb ground chuck

cut up the chuck steak into kidney bean size pieces
brown it and the ground chuck, drain fat
saute' onion, jalapeno, and garlic
add browned chucks, and all the mick fowler's spices except for the masa flour
brown spices w/ meats,etc. for 4-5 mins.
add beef broth, tomatoes, tomato sauce, and enough water to make it look right .
Simmer for 1.5 - 2 hours, add beans and masa flour according to directions
Serve w/ sour cream and hard cheddar and BEER.
